  1. Prepare 2 nos. /155 gms of Tomatoes.
  2. You need 1 nos. /155 gms of Orange.
  3. It's 55 gms of Jaggery (or sugar).
  4. Prepare 10 gms of Raisins.
  5. You need 50 gms of Dates(seedless preferred).
  6. It's 20 gms of tamarind + 100 gms warm water.
  7. It's 1/2 tsp of Panchforon (refer to aloo dum recipe, reference given) (see recipe).
  8. It's 1 of whole dry red chilli.
  9. Prepare 1/2 tsp of Chilli flakes.
  10. You need 1/2 tsp of Kashmiri Lal mirch powder.
  11. You need 1 tbsp of mustard oil.
  12. You need as per taste of Salt.
  13. Prepare 1/2 tsp of dry roasted Cummin and coriander powder.
  14. Prepare 1/2 tsp of ginger powder.
  15. It's 1 pinch of black rock salt.

Sweet and sour Tomato and orange chutney step by step

  1. First, soak the tamarind for at least an hour in warm water, once soaked, mix it with a hand and strain it. Soak the dates and raisins too. Dry roast some whole Cumin and coriander seeds and grind them into powder..
  2. Wash and chop the tomatoes, with the help of zester or zest peeler, zest the orange and separate the fruits from the pith and discard the seeds (if any)..
  3. In a frying pan heat mustard oil and pinch & add whole dry red chilli and Paanch Foran. Once it crackes add the chopped tomatoes, stir it for one or two minutes.
  4. Add Kashmiri Lal mirch powder, Turmeric powder, black rock salt and salt as per taste and mix well.Add about 1/2 cup water cover and cook for about 5 minutes..
  5. Then add ginger powder, raisins and dates along with the soaked water (about 1/2 cup) orange zest and mix well and cook for about 3-5 minutes..
  6. Add chilli flakes and the strained tamarind pulp and cook for another 3 mins or so. Add little water if required..
  7. Then add the jaggery and mix well and cook for about 3 minutes or so and then add the prepared orange fruit and mix well gently. Cook for about 5 minutes. At the end sprinkle the roasted Cummin and coriander powder & mix well. Your chutney is ready. Bon Appetit!!!!.
