- Prepare 1 of lemon juice.

- Prepare 1 of eggplant cut into chunks.

- Prepare 150 gm of paneer cut into chunks.

Summer Kebabs step by step
- Preheat oven to 200 c.
- Combine olive oil garlic lemon juice mixed herbs salt and pepper in a small bowl and whisk.
- Thread eggplant tomatoes capsicum and paneer onto skewers.
- Place skewers onto a baking sheet brush olive oil mixture onto the skewers and let sit for 10-15 minutes.
- Place into oven and roast for 10 minutes or until tender.
- Serve immediately garnished with parsley.
